From grove to table

A slower, smaller way to make olive oil.

01 — Harvest

Hand-picked at green-veraison.

We harvest in late October, when the olives are still half green — the moment of peak polyphenols. No nets shaken from the trunk; every olive picked into wicker baskets by the family and our village crew.

02 — Press

Cold-pressed below 24°C.

Stone mill, then a single mechanical extraction at the village frantoio — no heat, no water, no chemicals. The oil that flows out is exactly the oil we bottle.

03 — Bottle

Numbered, sealed, signed.

Each dark-glass bottle is hand-numbered out of the season’s run, sealed under nitrogen to preserve aroma, and signed by the family member who pressed that batch.
